Senate Bean Soup

My general idea has been to eat more beans and less meat. But when a friend called up and asked if I had a use for her leftover ham hock, it was a good opportunity to try out this classic recipe. This version is in Bernard Clayton’s The Complete Book of Soups and Stews, p. 203. I added the scraps of meat off the bone to the soup pot after filling my bowl. It tasted great.
