I found the recipe here and it is taken from Jean-Christian Jury’s Vegan: The Cookbook. Based on the description it’s a book that I should check out for myself as well. The curry was lovely. I always wonder, when there’s an ingredient listed as “yellow curry powder,” if I’m using the right one. I have my own Madras blend that I tend to reach for in these situations, but another option could take the flavor in a different direction. One other thing that happened with this meal is that I wanted to eat a mango with it. I had a ripe one, and it was a lovely accompaniment for both texture and flavor.
