I watched about half a dozen videos, but I followed these excellent instructions from @samracooks most closely. It worked! I suspect this method is at least as promising as aquafaba for vegan whipped egg/cream substitutions, but as far as I know it hasn’t been explored. I do want to try it with real teff injera and a spicier sauce, too. I went light on the berbere to be able to share it with some friends this time.
