Moin-Moin

This was yesterday’s lunch and it will be this evening’s dinner. In Nigeria it’s often served with a millet porridge, but it works beautifully with salad too.

Here’s another time I made it, including the recipe I used at the time.

Moin Moin was not quick to make, but it was subtle and delicious. The salad was excellent too. It was a surprisingly filling meal, despite being so light.
