From The New Spanish Table, p. 135. This salad is said to have been invented by a Catalan chef named Josep Mercader, so I ate it alongside a piece (or two if I’m honest) of Catalan tomato bread (Pa Amb Tomaquet), p. 165. This was my first time shelling and then peeling fresh fava beans. It’s a very different experience from eating the reconstituted ones, and makes me curious to try the fresh forms of more beans.
