I cooked a meal a while ago from an Iraqi cookbook called Delights from the Garden of Eden. Then I discovered that there is an earlier, unabridged version of the same book, and I found myself a copy. This recipe is on page 247 of nearly 650 pages, and it’s very delicious. I love working with dried split fava beans. So far I’ve only found them in Middle Eastern markets, and in the Middle Eastern section of a large Indian store. But once they’re found, they’re very easy to work with, and overall so far, I prefer the taste of the peeled beans to the unpeeled, and the dry to the fresh. I probably haven’t found favas that are fresh enough yet. Maybe some other year I’ll either seek out a farm that grows them or try growing them myself.
