Koki Beans


I didn’t intend to land in such a distinct wedge of the color palette here! The plantain fufu is a standard slice-boil-mash recipe. The other two recipes come from Sabina Leyla Jules’ The Motherland Cookbook. Koki beans p. 108 and Okra Soup p. 150. The green of the beans comes from the spinach that was added in before they were steamed. I was supposed to have wrapped them in banana leaves, but I didn’t have them and so I used a similar method to when I made moin-moin some time back. It worked out just fine, and I might add the remaining pieces to a salad. By the way, I only did a 1/8th recipe, two of us had it for dinner, and I still had leftovers.
