Koku-Kohu

Koku-kohu, from Sri Owen’s Indonesian Regional Cooking, p. 113. This one is from the Maluku, Spiced Islands chapter, and the recipe comes from the Mutiara Hotel restaurant. It was a lovely and full meal, with soybean sprouts, a coconut dressing, and smoked salmon. Normally it is served with smoked tuna. Next time I might either double the sprouts or halve the fish portion, and cut the fish into smaller pieces as suggested in the recipe.
