Kuih


I made a thousand mistakes and had none of the proper equipment, but they were still delicious. Next time I will need (in order of priority) a mold for the cookies, a steamer basket, and banana leaves. I made Natural Red Angku Kuih, Purple Sweet Potato Angku Kui, and Pandan Tray Cake. The beet wrappings were too dry, the purple sweet potato wrappings were not purple enough, and the pandan tray cake did not solidify as much as it should have. Mung beans show up as the filling in the first two, and as flour/starch in both parts of the tray cake. There must be hundreds of Kuih combinations that involve beans. Singapore, Brunei, and Malaysia are frequently mentioned in these recipes, but they seem to have a wide reach.
