The recipe is in Andrea Nguyen’s Asian Tofu, p. 137. I started on the lemongrass pressed tofu yesterday, let it marinate overnight, and baked it this morning. The flavor was fresh and full, and this dish is a great new take on a lettuce wrap for me.
