  1. Lentil and tomato soup from Bahrain, Salloum: Classic Vegetarian Cooking from the Middle East & North Africa p. 75. The noodles and the light sweetness of the coriander were great here. The butter was a nice touch too.

  3. Palestinian lentil soup, Salloum p. 80
  4. Marrakesh rice and lentil soup, p. 76. This one was creamy and buttery and almost risotto-like.

  7. Slow roasted bell pepper with red lentils, another favorite dal from 660 Curries, p. 401

  11. Lentil and garlic soup flavored with cumin, p. 72
  12. Tamarind lentil soup from the Arabian Gulf, Salloum p. 85. Very tangy!
