Rishta is a lentil and noodle dish from Syria and Lebanon. I followed Habeeb Salloum’s recipe on Classic Vegetarian Cooking from the Middle East & North Africa, p. 210. Ragheef ‘Adas is a lentil loaf from Palestine and Jordan. Both were good, especially with the added brightness of a salad.
