Oshingali

I was fairly warned that it takes a lot of time to peel the beans for this recipe. I only did a 1/4 portion, so 1/4 cup of black-eyed peas, and it took me about half an hour. There were over 200 peas in that little measuring scoop. They really do taste different without the peels. Sweeter, maybe. The spinach stew gave needed flavor to the meal. I used this recipe for pap but I didn’t have the mealie meal so I used maseca, since that’s also a finely ground white corn product. It seemed to work pretty well, but I don’t have a basis of comparison yet. I would happily eat this again! All the more so because it used only staple ingredients.
