Polenta, Beans, and Coconut

Polenta, Beans, and Coconut, from Mirta Yurnet-Thomas and the Thomas Family’s A Taste of Haiti, p. 96. There were two options for the recipe, and I chose “the tastier way,” so I started from dry kidney beans and made coconut milk from a fresh coconut. It was very good and very satisfying. I also had an avocado and made the avocado salad from page 71. There are at least nine bean recipes in this book and I’d love to circle back to them, as well as some of the other recipes.
