Revithada / Ρεβυθάδα

Revithada is a traditional dish from the island of Sifnos, and the flavor was a wonderful surprise. Chickpeas, olive oil, onions, and a few sage leaves from the garden are all known elements, but what happened to them when they baked together over several hours in a Dutch oven was incredible – a sweet, smoky, earthy flavor, a velvety rich texture.
