Westphalian White Bean Soup

I’m finally resuming the world tour from last year. Celery root is a great component in this soup, and gives it that special something. I actually made this and photographed it a couple months ago, and it looks like I ran out of carrots and forgot the bay leaves, but it still came out as a delicious and distinctive meal. I ate the leftovers very happily over the following week.
